Roasted Greek Potatoes

  • 1 pound red potatoes - small ones
  • 2 Tbsp olive oil
  • 1 Tbsp Greek seasoning (or oregano)
  • Juice of one lemon (2-3 Tbsp if you use the green bottle)

  1. Preheat oven to 375.  
  2. Wash and cut potatoes into quarters or more if they are big.  
  3. Toss potatoes in olive oil, seasoning and lemon juice.  
  4. Cover tightly with aluminum foil and bake for 45 minutes. 
  5. Remove foil and continue baking for 20 to 30 minutes until nice and golden.
