Smooshed Potatoes...from the kitchen of One Perfect Bite

Ingredients:1-1/2 to 2 pounds unpeeled small Yukon Gold potatoes
olive oil
coarse salt
4 large unpeeled garlic cloves

Directions:1) Preheat oven to 350 degrees F.
2) Pour 4 cups of water into a large pot and bring it to a boil. Add potatoes and 2 teaspoons salt and cook at a medium boil for 10 to 12 minutes, or until potatoes are cooked. Do not over cook. Alternatively, potatoes may be placed in a large microwave container to which 3 tablespoons of water have been added, and, cooked, covered, for 9 to 10 minutes on HIGH power until potatoes can be pierced with a fork.
3) When the potatoes are cooked, rinse them under cold running water to stop cooking. Place the potatoes on a work surface and, using your fist, punch them so that they flatten a bit. I protect my hand with a thin pot holder.
4) Place potatoes and the garlic cloves on a baking pan large enough to hold them in a single layer. Sprinkle with salt and drizzle each potato with olive oil. Transfer pan to oven and roast for 15 minutes. Turn potatoes to opposite side, drizzle with more olive oil and bake for 15 minutes longer. Transfer potatoes to a large serving dish. Peel and mash garlic cloves and add to potatoes. Mix well. Serve immediately. 

Yield: 4 to 6 servings.
Caramelized Potatoes

Ingredients:2 pounds small Yukon Gold potatoes, washed and unpeeled
1/2 cup granulated sugar
8 tablespoons (1 stick) melted unsalted butter
Coarse salt
Parsley

Directions:1) Put the potatoes in a pan and cover with heavily salted water. Bring to a boil and cook until just fork tender, about 10 to 15 minutes. Drain.
2) Melt sugar in a heavy skillet over low heat. Cook, stirring constantly, until the sugar turns light brown. Stir in melted butter. Add one layer of potatoes to pan; shake skillet to roll potatoes and coat all sides with caramel. Move potatoes to a heated platter and repeat procedure until all potatoes are coated. Sprinkle with coarse salt. Garnish with parsley. 

Yield: 8 servings.

Crack Potatoes or Loaded Potato Casserole

2 (16oz) containers sour cream
2 cups cheddar cheese, shredded
2 (3oz) bags real bacon bits
2 packages Ranch Dip mix
1 large (28 - 30oz) bag frozen hash brown potatoes - shredded kind

Combine first 4 ingredients, mix in hash browns.  Spread into a 9x13 pan.  Bake at 400 for 45-60 minutes.  

*I divided the potatoes into 3 small 7x7 disposable foil pans and froze them.  I wrapped them with plastic wrap and then foil.*

Potato Rings with Homemade Buttermilk Ranch Dipping SauceMakes 32-40
Ingredients:3 large russet potatoes, cleaned peeled and chopped into large pieces
1/3 cup plus 2 tablespoons heavy cream
¼ cup unsalted butter (½ stick), softened
½ cup caramelized yellow onions, chopped
3 tablespoons chives, thinly sliced
2/3 cup  all purpose flour
1/3 cup rice flour
2 tablespoons garlic powder
1 tablespoon onion powder
1 tablespoon smoked paprika
2 eggs, lightly beaten
salt and pepper to taste
2 quarts vegetable oil
buttermilk ranch sauce:

1/2 cup light mayonnaise
¼ cup low-fat buttermilk
1 ½ teaspoons fresh lemon juice
2 tablespoons flat leaf parsley, minced
1 tablespoon chives, thinly sliced
1 teaspoons dill, minced
½ teaspoon dry mustard
salt and pepper to taste
Directions:1. Place the potatoes in a large pot and fill with water.
2. Bring to a boil on medium-high heat and cook until the potatoes are fork tender, a20-25 minutes.
3. Drain the potatoes into a colander and pour back into the pot.
4. Pour the cream and butter over the potatoes and mash with a potato masher until smooth (Add more cream 1 tablespoon at a time, if needed).
5. Fold in the caramelized onions and chives until fully incorporated. Season with salt and pepper and stir.
6. Spread the mixture onto a sheet pan, about ½ inch thick and place in the refrigerator until the mixture has cooled down and hardened, 4-6 hours.
7. While the potato mixture cools place both flours, garlic powder, onion powder and smoked paprika into a shallow dish and stir together until fully combined. Set aside.
8. When the potato mixture has cooled, remove from the refrigerator and using 1-1 ½ inch circle cutters, cut out as many circles as possible (usually makes about 32-40).
9. Using a ½ inch circle cutter, cut out a ½ inch circle from every 1-1½ circle, creating a small donut shape.
10. Dip the potato rings into the flour mixture followed by the egg mixture and finally again in the flour mixture (make sure the rings are completely coated).
11. Place the coated rings onto a clean sheet pan, lined with parchment paper and place in the freezer and allow the rings to freeze completely, 4-6 hours.
12. Once the potato rings are frozen, preheat the oil, in a large pot, to 375°F.
13. While the oil heats up, place the ingredients for the dipping sauce into a mixing bowl and whisk together. Season with salt and pepper.
14. When the oil is hot, carefully drop a few of the rings into the oil and fry for 4-6 minutes or until golden brown.
15. Drain onto a large plate lined with paper towels and season with salt with pepper.
16. Repeat with the remaining potato rings and serve immediately with the dipping sauce.

Ingredients (2-3 servings)
  • 5-6 yukon gold potatoes, cut into thin fries
  • 2 Tbsp olive oil
  • 1/4 – 1/2 tsp garlic powder
  • 1/2 – 3/4 tsp sea salt
  • pepper
  • 1/4 c. loosely packed cilantro leaves, finely chopped
Instructions
Preheat the oven to 425 degrees, and get a baking sheet with rack ready (if no rack, just line with foil/parchment paper and drizzle with olive oil. Cut the potatoes into fries and place in a bowl of cold water to soak for a few minutes.
Drain the water and dry the fries with paper towel. Once dry, toss the fries with the olive oil, garlic powder, salt and pepper.
Lay on a baking sheet in a single layer, preferably one that has a cooking rack so the fries can have the air circulating all around them (and no need to flip.) Bake for 20-25 minutes depending on your oven and how crispy you like your fries. If using a baking sheet without a rack, halfway through the cooking time, flip the fries.
Once done, toss fries with cilantro in a bowl.
Enjoy by the handful!

Oven Baked Parmesan Seasoned Fries

NOTE: The amounts listed are for every one pound of fries. One pound of fries is the equivelant of appoximately 3 medium potatoes. (I just double or triple the recipe to fit within my needs).

Ingredients:

1 pound of medium russet potatoes (approx 3 medium potatoes)
1 1/2 TBSP of Extra Virgin Olive Oil
1/4 tsp Dried Thyme
1/4 tsp Dried Oregano
1/8 tsp Dried Rosemary
1/4 tsp of Garlic Powder
1/4 tsp of Old Bay Seasoning
2 TBSP of Kraft Parmesan Style Grated Cheese (I used reduced fat)

Directions:

*Preheat oven to 425.
*Wash and cut potatoes into 1/8ths.
*Place on a cookie sheet that has been lined with foil (I used Reynolds Release foil so that they will not stick, but you could also either use non-stick cooking spray or lightly grease the top of the foil with extra virgin olive oil).
*Mix all of the spices and the parmesan cheese in a small bowl.
*Place all of the potatoes (remember we are talking about one pound at a time) into a gallon size freezer bag, add olive oil and the parmesan cheese/spice mixture to the bag.
*Seal the bag and shake until the potatoes are evenly coated.
*Once thoroughly coated dump onto the prepared cookie sheet and spread in a single layer.
* Bake 30-45 minutes or until tender and lightly golden brown. (Baking times will vary depending on the amount of fries that you make and the size that you cut them). For the ones shown in the picture they were baked at 425 for 45 minutes.

Cheesy Bacon Oven Chips 
  • 1 large, uniformly-shaped russet potato, scrubbed well and sliced into 1/8" rounds*
  • cooking spray
  • 3/4 C. shredded colby jack or cheddar cheese
  • salt & pepper to taste
  • 2 T. crumbled bacon (about 2 slices) - I used real bacon bits
  • chopped parsley or chives, for garnish (optional)

Preheat oven to 375 degrees.  Bring sliced potatoes to a boil in cold, salted water to cover for 5 minutes.  Carefully drain, and transfer slices to a paper-towel lined countertop or cutting board.  Pat to dry.

Grease a baking sheet with cooking spray, and lay out potato slices so they are overlapping on it.  Spray lightly with additional cooking spray, then sprinkle with salt & pepper to taste.  Sprinkle evenly with shredded cheese & bacon.  Bake 12-14 minutes in preheated oven until cheese is melted & bubbly.  Serve with chipotle ranch sauce (recipe below).  Serves 2.

*You can use 2 medium-sized potatoes rather than 1 large.  Also, I like to leave the skin on but you can peel the potatoes if you prefer.

Chipotle Ranch Dipping Sauce
  • 1 T. ranch dressing
  • 3 T. sour cream
  • 1/4 t. chipotle chili powder
  • 1/8 t. cayenne (adjust more or less depending on how spicy you want).
  • 1/8 t. salt
  • 1/8 t. garlic powder

Place all ingredients in a small bowl, and stir to combine.  Refrigerate any leftovers.

6 lg. potatoes

1-1/4 t. salt


1/4 t. pepper


1/4 c. butter

1 c. Cheddar Cheese, shredded


1 c. hot milk


3 green onions, finely chopped


1/2 c. sour cream


Garnish: shredded Cheddar cheese, chopped green onions

Scrub potatoes, pierce skins and bake at 425 degrees for 60 minutes. Cut potatoes and scoop out pulp; mash. Add salt, pepper, butter, and cheese; beat well. Add hot milk and beat until fluffy and cheese is melted. Stir in green onions and sour cream; blend . Reduce oven temperature to 375 degrees. Spoon potatoes into an 11”x7” baking dish. Sprinkle with cheese and green onions; bake 15 minutes.

Roasted Greek Potatoes

  • 1 pound red potatoes - small ones
  • 2 Tbsp olive oil
  • 1 Tbsp Greek seasoning (or oregano)
  • Juice of one lemon (2-3 Tbsp if you use the green bottle)

  1. Preheat oven to 375.  
  2. Wash and cut potatoes into quarters or more if they are big.  
  3. Toss potatoes in olive oil, seasoning and lemon juice.  
  4. Cover tightly with aluminum foil and bake for 45 minutes. 
  5. Remove foil and continue baking for 20 to 30 minutes until nice and golden.
Easy Oven Roasted Potatoes

  • 2 large potatoes, scrubbed
  • 3 Tbsp olive oil
  • 1 Tbsp Italian Seasoning
  • 1 tsp salt
  • 4 Tbsp Parmesan cheese

Slice potatoes into very thin slices (1/4 inch). big ziploc bag to coat the potatoes. 

Toss potatoes with olive oil, Italian seasoning and salt in a ziplock bag to coat.  
Place in a single layer on a baking sheet lined with foil. 
Bake at 450 for 15 -20 minutes, until lightly brown.  
Top with Parmesan cheese and bake an additional 5 minutes.

Recipe Description
Roasted potatoes that are perfectly crispy on the outside and tender on the inside!
Ingredients
  • 1-½ pound Baby Red Potatoes, Scrubbed And Cubed
  • 2-½ Tablespoons Olive Oil
  • 2 cloves Garlic, Minced
  • 1 teaspoon Onion Powder
  • Salt To Taste
  • Pepper To Taste

  • Preparation Instructions
1. Preheat oven to 425ºF.
2. Place potatoes on a baking sheet with a lip, such a a jellyroll pan/half sheet.
3. In a small bowl, stir together the olive oil, garlic, and onion powder. Drizzle over the potatoes. Stir or gently shake the pan to coat the potatoes with oil.
4. Sprinkle with salt and pepper to taste.
5. Bake for 30-40 depending on the size of the potatoes, until tender. Stir every 10 minutes to allow for even cooking. Serve warm.

Ingredients

  • 4 medium russet potatoes, scrubbed
  • 4 large cloves garlic, thinly sliced
  • 4 oz Parmesan cheese, 2oz thinly sliced, 2oz grated
  • 2 tablespoons olive oil
  • Kosher salt
  • Freshly ground black pepper
  •  
  • Procedures
  1. 1
    Cut off a thin slice of each potato lengthwise to create a even base for potato to rest on. Slice off ends of each potato. Rest potato between two chopsticks or wooden spoons to act as a stop for the knife and carefully cut vertical slits in each potato about every 1/8-inch.

    Rinse potato under running water, fanning out to rinse inside of cut slits. Place potatoes on a plate and microwave at high for 5 minutes. Flip potatoes over and microwave again for an additional 5 minutes.

    Tuck slices of garlic and Parmesan in slits in the potatoes, it does not have to be in every slit. Brush potatoes with olive oil and season with salt and pepper to taste. Sprinkle tops with grated Parmesan.

    Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover gill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place potatoes on cool side of grill, cover, and cook until soft in the center and crisp around the edges, about 30-40 minutes. Remove from grill, let cool for 5 minutes, then serve immediately while still warm.

Ingredients

  • 1 pound waxy potatoes, such as white or fingerling, cut lengthwise into 1/4-inch-thick slices
  • 2 cups white wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 1/2 teaspoons Kosher salt, plus more to taste
  • 1/4 teaspoon freshly ground pepper

Procedures

    Place potatoes and vinegar in a medium saucepan. Bring to a boil over medium heat. Reduce heat to medium-low and simmer until potatoes are just tender, about 5 minutes. Remove from heat and let potatoes cool in vinegar for 30 minutes. Drain potatoes and gently toss with oil, salt, and pepper.

    Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Grill potatoes until browned on both sides, 3 to 5 minutes per side. Remove from grill, sprinkle with more salt to taste, and serve.

Cheesy Sweet Potato Crisps

Recipe inspired by Epicurious
Ingredients:
  • 2 sweet potatoes
  • 1/2 cup liquid egg whites
  • 1 cup Parmesan cheese
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon pepper
Directions:
Preheat oven to 425. Set a wire rack on top of a baking sheet. Spray rack with non-stick spray.

Peal sweet potatoes.

Grate sweet potatoes and then squeeze the moisture from them. (I just used my hands to press out the liquid.) The more moisture you remove, the crispier they get in the oven.

To the grated sweet potatoes, add the egg whites, cheese, pepper, and rosemary. Mix until combined.

Scoop out potato mixture and set on wire rack. (I used an ice cream scoop.)

Press sweet potato mixture as thin as possible. Repeat until potatoes are gone.

Bake for 25-30 minutes or until potatoes are dark around the edges and crispy.

Ingredients:

Servings: 6-8

8 large potatoes, peeled, cut into large wedges (about 6-7 wedges per potato)
4 garlic cloves, minced (more garlic is a good thing, less garlic is a no-no for this recipe)
1/2 cup olive oil
1 cup water
1 tablespoon dried oregano (get the Mediterranean, it's the best!)
1 lemon, juice of, to 1 1/2
sea salt
fresh coarse ground black pepper

Directions:

Preheat oven to 420°F A reviewer has suggested spraying the baking pan with Pam - that sounds like a great idea!

Put all the ingredients into a baking pan large enough to hold them.

Season generously with sea salt and black pepper.

Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.

The garlic will drop into the water/oil solution but its flavour will permeate the potatoes, and this way, it won't burn.

Bake for 40 minutes.

When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.

Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.

This will take about another 40 minutes.

Do not be afraid of overcooking the potatoes- they will be delicious.

Note: I often melt a bouillon cube in the water; if you do, make sure to cut back some on the salt.
